In a Pickle

This food find  was amazing.  Sweet midget pickles sweetened with Splenda!  Here is my recipe for a cool summer dinner when it is really hot out.  Super easy and works for both phases (10 Day Cleanse and 14 Day MNS) of the 24 Day Program.  The pickles give this excellent flavor.

Favorite Tuna/Egg Salad Dinner

3 small packages of dry tuna (light in water has best flavor)

2 hard boiled eggs, chopped

chopped celery

6 sweet gherkin pickles (Splenda variety), chopped very fine

Dijionaise mustard

Hellman’s Canola Mayo

Cucumbers

Tomatoes

Baby lettuce or spinach

Mix the first 6 ingredients in a large bowl.

On each plate put sliced cucumbers, tomatoes, and a small amount of baby lettuce or spinach.  Place a scoop (or 2) of the tuna/egg mixture on the lettuce.

Serve with a bowl of fresh berries and melon.

Serves 4

This recipe is acceptable for all phases of 24 Day Challenge.

  1. Can you salt tilapia slightly on the ten day challenge?

      That is fine.

  2. If I don’t like Dijon Mustard can I use regular? Also can I use the olive oil mayo instead of canola oil?

    1. @ Kaylene,
      Regular mustard is okay. No honey mustard. Use a very small amount of the canola since it is half the calories and fat.

  3. You recommend conola mayo over low fat hellmans mayo.
    I dont understand why. Low fat mayo has less than 1 sugar, 1 carb, 5 grams fat and 50 calories. Whats wrong with that?

    1. @Krsiti,
      We recommend using only a little of the canola mayo mixed with mustard. The low fat version had high fructose corn syrup and 2 carbs per tablespoon so should be avoided.

  5. Exactly how much mayo and Dijon do you use in this recipe?

    1. @ Emerson,
      1/2 – 1 tablespoon of canola oil mayo and 1 T mustard. Can add more mustard if needed.

  6. How about the spray Italian dressing for salads

    1. @ Kim,
      Our recommendations for salad dressing don’t change. Stay away from the fat free Italian and the spray. Some of them have sugar as the 2nd or 3rd ingredient!

  7. I use hummus instead of mayo and wrap it in a large lettuce leaf. That way I can eat it like a sandwich.

  8. Lots of responses say high in sodium/sugar content….what are the amounts so that when I’m grocery shopping I can take a look at a label and determine if it is acceptable?

      No sugar. There is not a set amount, but try to eat natural foods that do not have alot of sodium added.

  9. I couldn’t find Hellman’s Canola Mayo. I did find a low fat Mayo with olive oil. Think that will work?

    1. Just use Hellmans Dijioniase. Low fat mayos sometimes have sugar and other ingredients we are trying to avoid.

  10. We are on the 10 day cleanse. Would plain popcorn, no butter, no salt, be allowed? Would no fat butter spray be allowed on the popcorn?

      Should be okay if boiled in plain water and with no butter or sauces served with it.

  13. i was wondering the difference in gherkin pickles and dill pickles as well. i dont really care for sweet pickles. is the sodium the same in both? would love to make devilled eggs with the canola mayo and dill pickles. also would this be ok on the cleanse?

      Just be sure the pickles don’t have sugar added, and use limited amount of pickles and canola mayo.

  14. What about whole grain bread with the tuna salad? Good or bad?

      No bread on the cleanse.

  15. I don’t like tomatoes…..would it be okay to omit those?

      Of course.

  16. Can I have imitation crab for salads

      That is not a good choice since it has added sugar and wheat. Try grilled chicken, boiled shrimp, grilled salmon or other fish, or hard boiled egg.

  18. the salad dressing i use is olive oil, lemon juice and salt. is that OK on the 24 day challenge? also when I bake salmon I sprinkle lemon juice, garlic salt and olive oil on it. is that ok ??

      That is fine, just use small amounts of the olive oil. We use olive oil PAM for cooking.

  19. When I am searching for a salad dressing, should I watch calories, fat content or sugar content?

    1. Vinegar (not balsamic) and small amount of oil is fine. Also the Walden Farms Dressings.

  22. Can you use dill pickles instead? And how much of the mayo and dijionaise do you use?

      Small amount of pickles due to sodium content. Small amounts of canola (not regular)mayo. Okay to use a little more mustard.
