Spicy Ginger Chicken (ala P.F. Chang) – Updated

If you love the Cool Lettuce Wraps at P.F. Chang, and wondered if you could duplicate something that was lower in fat, sodium, and carbs, and complied with the 24 Day Challenge, this is for you!  This is an updated recipe.

PAM Olive Oil Spray

1 tablespoon Olive Oil

1 pound lean ground chicken

1 large sweet onion

2 tablespoons minced garlic

large knob fresh ginger (peel, then cut 4 slices and mince the rest)

1 cup shredded carrots

1 tablespoons low sodium soy sauce

2-3 tablespoons rice wine vinegar

1 can chopped water chestnuts, drained

8 oz. white mushrooms, diced in chunks

5 oz. shitake mushrooms, diced in chunks

1 can baby corn chunks, drained

salt, pepper

powdered ginger

garlic powder

4-6 packets Splenda

lettuce

Use large nonstick pan, spray well with PAM.  Add minced fresh ginger, garlic and onion.  After 3 minutes add the shredded carrots, olive oil and water chestnuts and stir frequently.  After 5 minutes add the mushrooms and baby corn chunks.

In separate pan, spray PAM, and saute the slices of ginger for 1 minute.  Add the ground chicken and season with salt, garlic powder and lots of powdered ginger.  Cook until done.  Remove the ginger.  Add the chicken to the veggies.

Add the Splenda, low sodium soy sauce, rice wine vinegar, salt, pepper, and very generous amounts of garlic powder and powdered ginger.  (This is key to having the dish nice and spicy so it marries well with the cool lettuce.)  Mix well and heat for 5 minutes.

Serve the spicy chicken in lettuce leaves as wraps, or on top of shredded lettuce.  Serve with steamed snow peas or vegetable of your choice.

Serves 4.

This recipe is acceptable for all phases of 24 Day Challenge.

  3. Mushrooms should definitely be avoided at all costs during the cleanse. This is not a cleanse friendly sauce; however, after the cleanse it would be OK sans the shrooms.

      There is not a restriction against mushrooms.

  5. I thought sauces were to be avoided during the cleanse. Doesn’t that include soy sauce?

    1. A small amount of soy sauce should not be a problem. If you are sensitive to it, avoid until phase 2.

  6. IS sriracha ok to have during the 24 dc cleanse? After the cleanse?

      I would wait until after the cleanse and use in limited portion.

      For best results, stick to the recommended veggies. Corn is very high in carbs.

  8. I thought corn, salt, soy sauce, And Splenda were not recommended on things to eat? Are all vinegars ok to use? For some reason I thought balsamic and rice wine weren’t approved either?

      You would not want to consume large quantities of any of these, but the amounts in 1 serving (this serves 4) of the recipe are fine. So, you would only be consuming 1/4 of tablespoon of soy sauce for example. This tastes fine with less Splenda if you feel that stalls you.
      There is a warning to stay away from Balsamic because of sugar content, and many people put large amounts on a salad.
      You are correct about regular corn, but these chunks, which include the cob, are fine in the recipe. They have 3 carbs, 4 grams of fiber, and no sugar.

      1. Thanks! I made this today and it was AMAZING!! Best thing I’ve eaten in the 14 day’s i’ve been on the challenge!

        I did change a few things. I only used 1/2 a sweet onion and I added 2 green onions. I didn’t use white mushrooms, corn, salt or splenda. I used Braggs soy instead of regular soy. I also added a few dashes of cayenne pepper and chinese five spice. Other than that, I followed exactly!! I used my food processor to finely chop the sweet onion, green onion, shitake mushrooms and ginger. I also used Butter lettuce leaves. My picky husband and 2 year old LOVED it too!! I did add a little siracha (spelling?) to mine as i served it too.

      Assume you already looked at the other recipes and food suggestions. We will add more recipes in the coming weeks. Suggestions are always welcome.

  13. Is it okay to have splenda and light soy sauce on the cleanse?

    1. Very limited portions. For example, a recipe we have on the site has 1 tablespoon of low sodium soy sauce and feeds 4 people.
      For best results, wait until after the cleanse.
